Easy Eats...Pudding Cookies and Camp Eggs

Jello pudding cookies? Yea, I was in denial at first, but when I tried it, I just kept thinking um, where have you been all my life? Now, it's the only way I'll make them because they come out so plump and chewy, moreso than any other cookie I've had.





I put everything/anything in the batter...but these have semisweet chips and mini M&M's. Crushed peanut butter cups are excellent too. Or white chocolate chips, walnuts, and dried cranberries. Oh, the list goes on.



An unwritten rule of sorts: reserving some cookie dough to be eaten by the spoonful while the cookies are baking and cooling. Haha. It's a must.



Also, I don't know about you, but breakfast for dinner has my name all over it. I'm usually a super fan of eggs benedict, but I thought I'd revive an easy classic for those days when you wanna eat like now. Camp eggs medium style. Yum.

What are you favorite ways to eat eggs?




Cut out a hole in the center of your favorite sliced bread, I use a small diameter cup. Slather up both sides of the bread with butter, then crack an egg. Sprinkle some salt and pepper, then crank your heat to medium.



I like to cover it with a lid because this will let the eggs steam a bit..and probably more importantly, let the butter melt into the bread.



Flip it!



And, you're done. It's like the easiest 3 minute meal.
