Barbara and Ian--simple teachers to Barbara as explorer and orginal Damsel, and hunky Ian into an action star.

The Doctor changed with each incarnation, and I think the classic show was good about choosing kidnapped, reluntant travelers (One), rescued soldiers and friends, (Two), brilliant or plucky assistants (Three and Four) for them.

Jamie was always cool--but I think he, Zoe, and Victoria brought out the best in the Doctor's heart. From Liz's departing statements, the Doctor was just one more cog in the Boys scientist club--I don't think she changed--just broaden her scope.

IMO Sarah Jane came ready made for adventure, and belonged in the Doctor world more than any other companion except Romana. Three and Four expanded her horizons and I don't remember this doe eye, he's the only one nonsense, but--oh well, Ms Sladen was amused by the "love'" angle, so it would be churlish to complain about it.
We get to see the Doctor fatherly again with Ace; Six with Peri was preperation for how angsty, insensitive, and self involved the Doctor could become. Anyone shocked by Ten's emo should catch Six's run. That was undisputedly an enabling, abusive relationship. I think traveling with Six, transferred Peri into a emotional dishrag.

The Doctor's relationship with Jo and Sarah--and with Jamie and Zoe seemed the most loving. I liked his playful little rivalry with Romana--but as a Time Lady who was content to stay in Academia, Romana changed. Poor Harry--I don't think the navy physician was used to being treated like a boob--but Harry perservered. The Brig was brilliant--he was the Doctor's friend because he didn't change--he just took things in his stride.
