1/2 # small white beans, soaked overnight, drained and rinsed
1 large onion, chopped
2-3 cloves garlic
2-3 large carrots, chopped
1 stem fresh sage
3 branches fresh italian parsley
1 pkg turkey kielbasa, chopped
1/2 c. rolled oats
approx 2/3 c chopped frozen spinach (maybe kale or collards next time?)
2 medium tomatoes, diced
Heat 1 T olive oil over medium heat and saute onion until translucent. Add garlic and cook a couple of minutes more. Add carrots, soaked beans, sage, parsley, kielbasa and oats, and simmer until beans are tender, 1 1/2-2 hours. Add spinach and tomatoes and simmer 5 mins before serving.
Served with whole wheat pita chips:
Separate and cut into triangles two large whole wheat pitas. Arrange on a tray, cut sides up. Spray lightly with olive oil or cooking spray and sprinkle with salt, pepper, onion powder and paprika. Bake at 350F for 10 mins, then leave in turned-off oven until dried out and crunchy or until soup is ready.
