It would be an organic restaurant in the Hotel Plaza, 768 5th Ave, New York. Furnished only with the very finest antiques. Several rooms, each room in another style. When you step into the place you should feel like having stepped into the past. A recherché hand-picked staff. In the bright art nouveau room a little stage for my tango ensemble and a grand piano and a large dance floor. Only appropriately dressed people would be allowed in my reastaurant. It would serve healthy delicious food without sugar. The name? "Wolf Sanctuary".
