(Lack of an) Idea Du Jour: Demonic Horses

Trying to figure out what "grimdark" is (especially when I hear Scott Lynch described that way), I've been looking at images of same.

And I see a lot of dark-clad demonic things on dark-barded horse-like things. Which, of course, immediately led me to the idea of the veterinarian for demonic horses. I'm not sure whether the vet is a real vet, or just the person who exorcises the poor demon, sticks it in a bottle, kills the horse, gets a new horse, and sticks the demon in. Frankly, it might well suck for the demon, but I suspect that demon society has enough people accused of things that they can afford to do this. (It would be like the USA turning all criminals into cyborg tanks for the army, which is its own idea.)

Anyway, while a great idea for a setting, it tells me little about what the vets do, why they co-operate with the dark army. Are they secretly poisoning the horses with some magical time-release poison, so the horses will drop dead in battle? Are they quislings to humanity? Are they just paid well?

And what about when (if) the demons discover the deception?
