My second attempt at apple cinnamon jam. Living in a different country forces you to get creative on your own cooking-wise; jam here is expensive and apple cinnamon jam is really rare. I had a bunch of apples that were going soft in the fridge and this saved them. I used this recipe, modified by cutting the maple syrup amount in half because I didn't want to open a new bottle, and tripling the cinnamon plus throwing a teaspoon of cloves in. I really liked the way the maple syrup added some sweetness without being cloying and letting the apple flavor shine through, though I couldn't really taste the maple flavor itself. I screwed up my last batch by adding too much cinnamon, but I really think another tablespoon or two wouldn't have gone astray this time.
