While I wait for OpenITG, here's what I had fun making quickly before going out with my mom last night to drive her car home after she bought a Vespa.
Boil water and throw in a serving of spaghetti to cook like normal.
Start about a quarter cup each of half and half and milk warming in a small sauce pan together.
Season with garlic salt, black pepper, and paprika.
Melt in a few slices of American cheese.
Melt in a couple ounces of shredded smoked Swiss cheese.
Once that is all melted together, stir in another quarter cup worth of salsa and then keep heating the whole thing on low to thicken it.
At the same time, take some bean paste (black beans, hominy, a green pepper, an onion, and some salsa simmered together and then run through a food processor with flour and vinegar) left over from Sunday and mix it about 1:1 with small curd cottage cheese.
Fry that up on a griddle. It will be messy due to the cottage cheese but without it the flavors won't mesh as well with the sauce. Just keep frying and smooshing it together.
If you did it right they'll all get done almost simultaneously. Drain the noodles, put them on a plate, arrange the bean patty alongside them in an aesthetically pleasing manner, and smother in the sauce. Nom it down quickly with some bread to sop up the excess sauce. Go with your mom so she can buy a Vespa.*
* I don't know if the recipe causes that last step every time or not. I'll have to try it again sometime to see.
Planned for tonight: peanut butter chip and banana pancakes with creamed honey on top.
