I've been making beer, something I've often attempted and never succeeded at in a way that pleased anyone but myself, now that I have a steady income I can actually afford to buy all the equipment and stuff and do it in a more reliable fashion. Tonight was the last night of fermentation, though I wasn't sure it had fermented properly, so my dad and I poored a few ounces out of the spigot on the bottom of the Ale-pail and tried it. I was floored. The dark brown substance that emenated from my fermenting bucket was rich and brown and formed a little creamy proto-head in the bottom of the glass. It looked and smelled like Guiness (maybe a shade lighter) and even tasted like a stout! It didn't have any off flavors, it didn't taste thin or watery, I was flat out stunned, it tasted like real beer. My Dad couldn't believe it either, that was probably the most satisfying part, watching my Dad's facial expression after he tasted the beer, there was this visible change as he came to believe this could actually work. Now he's excited to bottle tommorow!
I need bottles! Anybody want to drink a bunch of beer?
I'm going to try to get some of these tablets to carbonate the beer instead of using a second fermentation. It seems like it's much easier to get contaminants/off-flavors using yeast to carbonate the beer.
