I'm pretty sure that Sam already knows it's Ruby and has already slept with her and everything, they just don't want anyone to know. I don't know why he had the presence to botch her name but he had to have known who she was so it must have just been a show.

don't worry, all those answers help me a lot to understand all the drama ahead, and i haven't seen it because i'm from chile/southamerica, and the episodes are a bit late for warner channel in comparision with the CW in USA
