Qualia helped me make 'Blancmange' the other day. It's a simple pudding that uses milk, sugar, cornstarch, salt, and whatever flavoring you want to add. I went looking for an alternative to the JELL*O package sitting on our counter, tempting me to shake-shake-shake it up. Verdict: takes about fifteen minutes longer to make but lets you choose any flavor you want.
Basically, warm 2c milk. Combine 4T sugar, 3T cornstarch, 1/8t salt. Add 1/4c of the still warming milk to the dry. Add mixture to double boiler or heavy pan, heating on medium/medium high so as not to scorch the milk. Stir constantly, slowly add the warm milk. Once thickened, reduce heat and continue stirring for another 15 minutes or so (to further beak down the cornstarch and prevent it from having a gritty texture.) Let cool, add 2t flavoring, then chill in the fridge.
It's thick enough to use as a pie filling, or at least mine was... I'll try cooking it a bit less next time. Chocolate is supposed to be easy to do, just add cocoa at the end (I would still add some vanilla.) I chose almond. Mmmm. (Doubles nicely too, btw- I used 4c milk.)
