Tasty breakfast hash I made this morning:
1 sweet potato
1 med/lg yellow onion
1 Apple (McIntosh?)
1/4-1/2 lb Kale
Heat some olive oil in cast iron pan on Med-high. Skin and dice potato, toss in pan, cover.
Same for onion, stirring before recovering.
Turn down to medium heat.
Same for apple (remove core, duh), stirring before recovering.
Rinse and cut leafy parts of kale off stems. Shred, stir pan, toss on top and cover.
Give it another few minutes (7 or so) as you see fit- test potato for softness.
I added a little sea salt and nutritional yeast, and a little butter (which was probably unnecessary.) The key is to give the potato enough time to carmalize a bit and bring out the sweetness. Stir it up and it's a very tasty, sweet, and hea- uh, happy. It's a happy breakfast.
I also recommend a light Fraggle Rock to accompany it, perhaps some Season 1?
