As somebody who does this for a living your whole post just makes me feel kind of sad. I have friends who feel the same way they just hate the small talk. Hell, I hate sitting there having things done to my own hair, feeling the pressure to say inane little things to whomever is doing my hair at the time.
Best thing you can do? Simply close your eyes and don't talk, or bring a book/magasine. It's never rude to say that you just want to relax, or toss out a little "oh, sorry, I am just not paying attention right now! Do what you need to do!"
I won't lie and say that my quiet clients don't scare me. Did they like it? Are they upset with me? Am I hurting them? Do they just wish I would get my hands the hell off of their hair and leave them alone FOR THE LOVE OF GOD? I really never know. The truth of the matter is that they only scare me once. After that you realise they just don't want to talk.
