Dina's Holiday Fudge

2 Tbsp butter or margarine
2/3 Cup undiluted Carnation evaporated milk
1.5 Cups granulated sugar
1/4 tsp kosher salt
2 Cups mini marshmallows
1.5 Cups Ghiradelli semi-sweet chocolate morsels
1/2 Cup chopped pecans
1 tsp vanilla extract

Combine butter, evaporated milk, sugar, and salt in a medium, heavy saucepan. Bring to a boil over medium heat, stirring constantly. Boil for 4-5 minutes, stirring constantly. Remove from heat.

Stir in marshmallows, chocolate morsels, pecans and vanilla. Stir vigorously until marshmallows are melted. Pour into foil-lined 8-inch square baking pan. Sprinkle with additional pecans if desired. Chill until firm.

Makes about 2 pounds.
