I got home late after two movies last night and cooked a nice soup. Here is the recipe
1 tbsp olive oil
8-10 spring onions chopped.
1 red capsicum, chopped.
300g chick pea can
400g chopped tomato can
1 teaspoon cumin seeds
1 clove garlic
100g baby spinich
Salt and Pepper
750ml veg stock
Heat oil in saucepan and add spring onions. Cook till soft.
Add garlic, capsicum, cumin seeds. Cook till all mixed up.
Add tomato and stock and cook 10mins
Add chickpea and cook 5 more mins
Add salt and pepper and spinich, cook 2 minutes
Serve with buttered bread.
