I've been reading barbara kingsolver's, Animal, Vegetable, Miracle and - while I have yet to finish it - am already fully prepared to force this book  upon everyone who cares about food and/or food politics.  it is smart and charming and has amazing recipes that get me really excited for this summer's vegetable crop.  yesterday, while reading on my morning commute, I came across a recipe for blackberry-basil crumble that  looked so incredible that it quickly occupied most of my brain.  fortunately, I had nothing to do at work, so I could a) be fixated on a recipe and not AIDS, and b)  leave early to enjoy the sunshine and bake.

and it was rocking.  I also finished reupholstering my chair.  took me about a year to do, but you know what?  it looks great.

below is the recipe as tweaked by me for vegan purposes.

2-3 apples, chopped
2 pints blackberries
2 tablespoons balsamic vinegar
1 large handful of basil leaves, chopped
1/4 cup honey

preheat oven to 400.  combine the above mixture in an ovenproof casserole dish.  mix and set aside.

5 tablespoons whole wheat flour
3 heaping tablespoons brown sugar
4 oz earthbalance or other vegan butter substitute
1/3 cup rolled oats

mix the flour and brown sugar together.  add the earthbalance, mixing together to make a grainy paste.  add the rolled oats to make a chunky, non-uniform mixture of crumb-like drops.  sprinkle over the top of the fruit.  if this looks sparse (or if you like oats), add a thin layer of rolled oats over the top of the dish.  bake 30 minutes until golden and bubbling.

I personally have a strong dislike for overly sweet things, so I would possibly cut back on the amount of honey used.  however, try the berries before doing this; if they're tart, then maybe honey is the way to go.  of course, I also don't like honey, so I may be more than a bit biased.
