Everyone needs one!!

One of the things I got for my birthday was a puff pan:



I am totally in love with it. I had never heard of these before (finally saw the ad for it this weekend on tv) but the NutriSystem boards were ablaze with recipes and ideas for making things in puff pans. So I went to Target (you can also find them at Bed, Bath, and Beyond) and got one. It is fabulous. I use it almost every day, sometimes more than once. Everything tastes better as a puff!

This morning, I made Blueberry Applesauce Oatmeal puffs, which were decadently delicious! Who knew losing weight (11.8 pounds in 4 weeks) could taste so good and be so filling??



To make these (didn't get a picture of them since I was in a hurry to get my bloodwork done so I could eat them)(took them along with me to eat after they'd drawn my fasting blood) combine the following:

1 pkg. Quaker Weight Control Cinnamon Oatmeal
1/2 cup Egg Beaters
1/2 serving (about 1/4 cup) Mott's Healthy Harvest Sugar Free Blueberry Applesauce
1/2 tsp. baking powder

If you don't have a puff pan, you can make 2 muffins out of this recipe by dividing the batter into two ramekins sprayed with Pam and baking at 350 for 20 minutes. (They cook up in a fraction of that time in the puff pan!)

It makes 10 puffs. They would be probably be even more yummy if I'd had fresh blueberries to put in the center as they baked but I used the last of those yesterday morning. For anyone who does NS, this counts as a breakfast entree + protein + 1/2 fruit serving. If you add blueberries to the center, that would make up your whole morning fruit serving.
