Overkilling with ricotta cheese!
I know it's gonna be hard to top the preceding Ttumpsky piece, but we're moving on to -- RECIPES!
I'm eating up stuff in the fridge, preparing to leave Vero on Saturday. (Long story...)
I found cottage cheese in the freezer (from God knows how long ago!), and followed somebody's advice that it substitutes well for ricotta cheese. I made lasagna alla Paola the other night, and it was luscious!
Cleaning further yesterday, I found a big container of ACTUAL ricotta -- so I stuck it in into the regular fridge to thaw.
Well, with leftover lasagna, I wasn't about to make a second batch! Instead, I pulled out the leftovers -- and incorporated the ricotta I'd just thawed, mixed thoroughly.
Just had some for lunch -- zowie!
However MUCH ricotta (or cottage cheese!) you use in making lasagna, it ISN'T enough! Trust me!
