Just made the best extra-rare steak. Shoulder meat, so it was nice and tender. Seared it at very high heat for three minutes per side, tossed it, pan and all, in a 500F oven for a few minutes, then let it rest. Combine with garlic mashed potatoes and a Caesar salad, and you have a great meal.
Now Erin's out getting chocolates (and cookies?), which I plan to have with some whiskey on the rocks. This has been a relaxing weekend. Good thing too, since the next week is going to be insane with school work and such.
