I had that problem when I first started working with a 50mm too. I usually shoot in live view so I can set spot-metering to one of the dolls' eyes, then I zoom in and make sure it's properly focused while magnified.
I find that a prime lens is best for getting a crisp image. Be careful with your actual aperature and shutter speed. Make sure your aperature is closed down enough to get a deep enough plane of focus / depth of field (toward f16, f22) but you still have a high enough shutter speed for camera shake (above 1/60) or tripod it. You also can't get too close to the subject with a 50mm. I think its at least 6"-12" away. Experiment with this when you have a lot of light. Good luck!!! I always like your pics anyway :)
