Recipe for 1 serving:
- 8.5 oz of peas and carrots
- 1 medium chicken thigh
- 1-2 oz of tubular rice noodles ( Asian markets have loads)
- Chicken broth (powder but if you got canned broth, forget water)
- Water
Put veg (liquids and all) plus 2 cans of water and broth into pot and bring to boil. Cut thigh into small pieces and put in. Bring to boil, break up noodles and bring down to simmer for 30 mins or until noodles are cooked thru.
