I am on a computer that won't let me email. Pancake chocolate is an exception! Absolutely good. As for my own personal Thailand suggestions ( which are not as seasoned as Marika's, but may overlap)
Chiang Mai is a great city. Lovely and fun and alive.You could do a short trek out of there.
I reccomend the night market and the Spicy and Tangy restaurant.... they don't speak english there and are only open late it seems... so just point to something on the menu. Everything is good. draw a picture that looks like a fish and ask for curry.
Ayuttaya is about 2 hours outside of Bangkok- it is a small island and there are many bicycles for rent. It contains the ruins to the ancient capitol and is a very peaceful place. Good food and lovely to explore by bike. Take the train there. It runs often and is very cheap. ( you have to catch a ferry across the river to the island from the station. just follow people or ask. you basically cross the street and walk straight until you come to the ferry.)I stayed at Baan Lotus... it may have changed if it came out in the new lonely planet guide... But the lady there is RIDICULOUSLY sweet. The rooms are really nice, they overlook a pond full of lotus and turtles in the backyard. She may remember me too. There is a silly little night market there full of interesting food and t-shirts with funny english too.
Of course, for beaches there's Koh Tao... very relaxing and nice. We stayed at the Sunset guest house on the far side of the island from where you get dropped off. It's a walk! But very beautiful and secluded. Far from town, though.

Also... I am sure you will discover, The Taj Mahal is now closed at night. Or it was when I was there. It closes at 6, I think. Or 5. Also...
Jaipur... is past Delhi and given the amount of time you have, really not worth the trek. I swear it. It is just a big rusty colored city full of gem/bead shops and monkeys. I know that doesn't sound bad... but really... I didn't have the greatest of times there... It was fun with Ilan, we explored and found the castle thingy... but when I came back... nahi, nahi.
