Serves 3/4
1/2 bunch lemongrass
1 red pepper
1 bunch spring onions
4/5 birdseye chilies
5 cloves garlic
3 tomatoes
1 1/2 inches ginger
oil
1 lime
lemon juice
1 pack mushrooms
1 pack mini corn
1 pack mange tout/green beans
1 tin coconut milk
1/4 tube tomato puree
fresh coriander
whole cumin
Get oil really hot in a pan, then add spring onions and tomatoes. When tomatoes start to go mushy, add garlic, ginger, lemongrass, chilies and a teaspoon of whole cumin. When onions start to go soft add a decent amount of lemon juice and the juice of the lime.
While you are doing this, boil the mini corn and the mange tout/green beans in a separate pan until they start to go soft.
Let the onions etc fry for a while, then add the now hopefully soft veg, and the mushrooms and pepper, and give it all a good mix. Then start to gradually add the coconut milk, mixing as it goes in. Turn the heat down and let it simmer for about 10mins. Add a good bit of coriander. Let it simmer while you make rice or noodles.
