Japanese hot veggie curry

I think I got a little bit carried away with all the veggies in tonight's curry...
Eggplant, mushrooms, zucchini, red and yukon gold potatoes, golden parsnips, carrots, onions and green pepper.

One completely full 7 quart pot.

Anybody want some? *g*
