Okay so firstly I assume that there have been six Chosen who were successful in regenerating the world, as otherwise there's just not enough Chosen across the two worlds to fill the Tower of Salvation, and Phaidra said that unsuccessful Chosen just ... well, died. So I assume that the reason why Tethe'alla prospered for so long was that the Chosen from Sylvarant kept ... dying! All the time! So by the time that Colette was born and she was identified as the Chosen, they were kind of desperate. So they cut down on Colette's freedom entirely and had her entire childhood based off the life of the Sixth Chosen of Regeneration. So a lot of Colette's exposure to things was based off the Sixth Chosen's experiences. (her not going swimming, for example, was because the Sixth was terrified of water and never learned how. Her use of chakrams was because that was the weapon the Sixth Chosen used etc etc.)
However! The Sixth Chosen didn't have an opinion on bell peppers! When Colette tried them and didn't like them, she wasn't told that she had to like them because the Sixth Chosen did. So Colette convinced herself that she hated them more than anything in the world, because it was something that was purely Colette rather than someone else. By the time we see her in the game, she detests it to bits because it's so much a part of who Colette is, rather than who the Chosen is. She doesn't really realise that it's like that. Lloyd probably has, if he ever thought about it.
