I made an excellent modified/vegetable-based pho. It was good enough to add to the list of main course dishes I would serve to people who aren't me, which is a pretty short list:
-Eggplant parm sandwiches
-Vegetable lasagne
-Lemon teriyaki salmon
-Tomato & basil pizza
-Sesame noodles
-Pho
I wish I could make a good stir fry or a good red curry. I have been trying for years, but they're still rather bad. More hopeful are my soups and salads. I played a little with soups this past winter and made a pretty good carrot and a split pea that was good except that I burnt it (but smoky flavor!). It's much too hot for soup-cooking lately, but come November I'll do more of it. Summer's a great time for salads though.
