Spicy Sesame Noodles

1/4 cup peanut butter (I prefer chunky)
3 tbs water
3 tbs rice vinegar or 1.5 tbs white vinegar and 1.5 tbs water
2 tbs tamari or soy sauce (I use soy, works just fine)
1 tbs freshly ground ginger (or more, to taste)
2-3 tsp chili oil (or to taste)
1 tsp sugar
1 tsp sesame oil
8 oz pasta
3 tbs sesame seeds
2 scallions, sliced

Mix everything but pasta, sesame seeds, and scallions in blender until smooth. Mix pasta and sauce. Top with sesame seeds, scallions. Makes about 2 large (dinner size) servings.

It's a super fast recipe that I'm utterly in love with. I'm working my way through "two weeks of vegetarian recipes", and this is my favorite thus far. My least favorite was fettucine with black olives and parsley. I'm no big fan of any of the three. I hoped I'd like them better when prepared together in this particular way (recipes will surprise you sometimes), but alas, I thought it was awful!
