Easter

The thing about Easter is, is sometimes we celebrate it and sometimes we don't. No one in my immediate family is religious, so it's never been about that. And once you grow up you don't do the whole Easter egg hunt any more. But this happened to be one of those years we decided to celebrate in some fashion. Grammy wanted my mom to make a pot roast so we'd have that and she'd come over. So that's what we did. And actually this time we even colored eggs. I haven't done that since I was a kid. I can't say it was all that exciting to do. No one was super thrilled about it lol. It was Grammy's idea for us to do this. Perhaps we've all just become boring old farts.

The pot roast was really good. Made with pork shoulder soaking all day long with baby yellow potatoes, onions, carrots, and parsnips. It was the first time I've ever tried parsnip before and it was pretty good. Then we had mini cupcakes for dessert. I helped put the liners in the tin and sprinkles on the frosting. My mom actually made three batches of these little cupcakes, so we have more than we'll ever need. No chocolate bunnies to be had that day, although I did buy some at the store last week. Never can have enough dessert. :)
