Mint Oreo Cupcakes for Kathy's Bday
These cupcakes were inspired by Kristan from Confessions of a Cookbook Queen.
I followed her instructions for the cake, but deviated a bit on the frosting. Sadly, I did not take into account the heat when I made these, so as you can see, the frosting started running a bit. Even so, they were delicious!
