I mean, I am doing happy dances around Damon rejecting Katherine (sorry about your ship!) because I take it as a sign that he's becoming healthier, but it is The Most Implausible Thing Ever. You're absolutely right that it doesn't fit with what we know about the way Damon loves, the way he loves/loved Katherine, nor does it fit with what has happened on the show up to this point, particularly and most recently with how he reacted when Katherine brought him the cure as you mentioned.
I have decided to believe (even though I know this is probably not what the writers are going for--because this very much appears to be a rush to invert the triangle) that Damon's faking being over Katherine--because he's finally figured out how to use defense mechanisms--and simultaneously throwing all his Katherine feelings on Elena.
So my previously mentioned happy dance is more based on these assumptions than any belief in the plausibility of what the writers are trying to do.
And about the inverse triangle, if I may run with this tangent for a moment, I sincerely hope they don't turn Stefan into Damon Redux and Damon into Stefan Redux. I think they're going to though, which is really silly considering they have so much more to work with than that and turning them into each other is actually kind of dumb, imo. What's the point? All you've changed are aesthetics then. And they'd be undoing all they've done to create separate, well-developed, and unique characters in Stefan and Damon.
