Recipie: Sweet and Sour Chicken

A reminder, I don't cook healthy. :)

Chicken:
2-3 lbs boneless/skinless chicken (Breast or thigh)
Chopped into roughly 1/2 to 3/4" cubes
1/2 c. all purpose flour
1 tbs. Garlic Salt
1 tsp. Ginger
1 tsp. Sesame seeds
1/2 tsp. Curry Powder
1/2 tsp. Pepper

Sweet and Sour sauce:
1 medium yellow Onion, coarsely chopped
2 tbs. Butter/Margerine
1/3 c. Lemon juice
2 tbs. Soy Sauce
2/3 c. Water.
1/4 c. sugar
Preferred thickening agent (1-2 tsp. flour, Corn Starch, Arrowroot + 1-2 tbs. water. The goal is something a little thinner than catchup.)

Olive oil as needed/wanted

In a large mixing bowl, combine flour, garlic powder, ginger, sesame seeds, curry powder and pepper. Mix well. Add chicken cubes and stir to coat chicken thoroughly with flour mixture.

In a large frying pan or wok, heat a small amount of oil. Melt the butter and then saute onions for about 5 minutes. Remove onions from pan.

In the same pan, fry chicken in small batches, 6-10 minutes each batch, adding more oil as needed. Keep cooked chicken warm in a covered bowl.

Combine Lemon juice, soy sauce, water and sugar in a small bowl. Add sauce mixture to pan (after reducing/removing oil, if desired. Leaving some of it in adds more flavor from the chicken and flour mixture, but does make the sauce greasy.) Add onions. Allow to simmer for 3-5 minutes. Add thickening agent. allow to simmer another 2-3 minutes.

Mix sauce and chicken together, serve over rice.
