I just read all of the pieces in this series and like them very much. They're unconventional, more so than anything I've read in a while. Your view of immortals is great, there are a few passages where it really jumps at the reader how alien and different their view of things must be.
So many moments leap out at me: * MacLeod's definition of Immortal existence as unconnected * Methos undone by the kindness of his friends finding really good ice cream for him * Joe being reassured by Methos, that no matter how bad the night went, it probably wouldn't give him nightmares * Joe unknowingly evoking an ancient herdsman's custom by feeding Methos * Joe telling Methos about first falling in love with Mac * Methos's unfortunate, anachronistic tea * Methos copying Mac's chronicles during that dangerous sea journey * Joe's chronicles going from poetic to conventional in the mid 80's, once he realized he was in love * Mac's recognition that Methos feels safe with Joe, because he is a mortal and is utterly, uncompromisingly loyal * Last but not least, the ROG getting annoyed with Mac for getting himself pinned down on both sides, and then doing it himself when he comes back to bed.
Whew, this comment is almost as long as the story!
One minor point - you are missing a in there, near the end

This series was a great pleasure to read again. Your characters are deeply emotional without losing either their intelligence or sense of themselves, and the dialog evokes the very timbre of each voice with uncanny accuracy.
This is one of the stories I'll revisit time and again.
So good. Like whole ice cream made with the real ground vanilla bean... Just. Right.
