I've been wanting to purchase some ascots like
these, but I'm not sure how to tie them in that sort of bow. I've looked at a lot of tutorials and played around with some fabric at home, but the closest I have come to the look of this is just tying a regular bow (now a bow tie, just like one would tie a bow with ribbon

An ascot is tied very similarly to a tie, with slight different variations - the best link I have in my collection to illustrate is here:

It looks to me from the picture you've posted that someone has started with a Regency style cravat, and tied a bow instead of one of the usual formal knots, as was the habit of the 18th Century Macaronis (a dandy to you or me). Basic info on regency cravats is here:

If you're having trouble tying a bow that looks tidy, you could use one of the methods florists/crafters use to get a tidy bow(which I've grown up calling the bunny-eared method).
