AND NOW... CHOCOLATE CRACKLES!
These crunchy, easy, and oh so ugly, fattening and yummy sweet treats are another must for any children's party in Australia and I'm pretty sure New Zealand too.
Most Antipodean kids would have made these with their mum or dad at least once, and then scoffed them until quite nauseous.
They're great fun to make with your kids, and the only cooking is the melting of the copha - which, of course, should be done by an adult. Pouring in the melted copha, is of course an adult's job too. The rest... well, let the kids go to town and be very proud of the result!
RECIPE
Ingredients:
4 cups Rice Bubbles (Rice Krispies in the Americas)
1 cup icing sugar (don't know if it's called that worldwide - it's extremely fine white sugar used for making icing and frosting)
3 tablespoons of good quality cocoa
1 cup of dessicated coconut
250g (9oz) Copha, chopped
Paper patty cases (about 24)
Method:
In a large bowl, mix the Rice Bubbles, icing sugar, cocoa and coconut
Melt the copha in a saucepan over a very low heat - let cool slightly
Pour the copha into the bowl and mix with the dry ingredients with a wooden spoon or implement of choice
Spoon into paper patty cases, and let cool to set
Pig out!
Variations:
You can add marshmallow pieces and chopped glace cherries to make them like a rocky road, and if you substitute white chocolate cooking buds and unsalted butter for the cocoa, icing sugar and copha - well - you get the idea. If you want stronger choccie ones, either double the cocoa, or substitute dark cooking chocolate melted with a bit of unsalted butter for the copha, sugar and cocoa. You can add all sorts of things to them to make your own fattening, sugar coma inducing sweetie!
