I put together a nice spur-of-the-moment pasta dish tonight. Here's the recipe.
Start some boiling salted water. Throw in whatever pasta you want. I used just plain ol' spaghetti.
Start the sauce with bacon fat in a pan, on medium.
Throw in some roughly chopped tomatoes.
Aggressively salt the tomatoes. I'm talking 5 generous pinches of kosher salt per tomato.
Cover, cook down.
Add some cilantro to taste. Any other bitter herb or green should do, such as lovage or arugula.
Finish the pasta in the sauce. Yer done.
Self-criticism: I think the recipe requires some acid. Ideally I'd be using very acidic tomatoes, but the ones I used were pretty sweet, so when combined with the bacon fat it was an incredibly sweet sauce. The cilantro added a nice bitterness to offset the sweetness, otherwise it would have been like pig candy (not that there's anything wrong with that). But I do think it could have used a little acid, or maybe some heat, a few chiles.
