On plot or lack thereof in Mischievous Kiss and why it does not matter

I have now seen a repeated complaint about the poor beleaguered Mischievous Kiss - namely that while it has plenty of cute interactions, it is remarkably low on plot. The statement that MK has little plot is correct - the story is basically a series of cumulative interactions between the leads which ends up in their finding love with each other. But to complain about the lack of plot seems absurd to me! It is a romantic comedy, a genre that by its very definition has little to no plot. To complain about a romcom being low on plot is like complaining about a period drama having swords and guys with beards.

I love plotty dramas more than most of my friendslist (or English-speaking drama fandom in general if page count comparison between plotty and fluffy dramas on soompi is an indication) but even I do not expect much plot in a romcom. To pick three very popular beloved romcoms at random - how much plot did Goong have? Or Soulmate? Or You're Beautiful? I've christened YAB "Plotless Wonder" but the other two do not fare much better in that department. If you want plot, you should probably look outside the romcom genre - Giant is still airing, or you can wait for Athena and Runaway. Or even check out a drama which has romcom elements in its genre mix (Prosecutor Princess is a mix of romcom/procedural/revenge saga so there is plot). But to complain about a particular romcom not having plot seems...odd.
