I really like the closing paragraph.

On the subject of carbohydrates, I have found that complex ones, (whole, unpolished grains; brown rices, oats groats, quinoa, wheat berries, etc...) enable a person to feel much fuller for a longer period of time. Apparently people eating these do not experience the large sugar spikes the polished grains, including breads cause, even if you buy whole grain bread. It's the grinding of the grain that causes the sugar spikes.

Anyhow, it's really helpful to know for those who are diabetic or fighting weight troubles. (I'm neither - * luckily * )

A lot of the time it's the processing of normally healthy food that makes them unhealthy in reality. Like you said before, stick close to nature. Best damn advice I know of. ;p

I grew up on a farm, and I know enough about how the meat industry in Sweden works to know that the animals live good lives and are well taken care of. I don't eat meat because I don't like the taste of it. Quorn on the other hand, I could eat every single day and never tire of it. *happy smile*

I don't have any idea how the meat industry works in other countries, but I know in the US, it is despicable and horrifying. If any other animal in this country were treated that way, the person responsible would be thrown in jail for animal treatment violations. However, our elected officials turn a blind eye to this kind of treatment because they get kickbacks.
