More food pictures! Today Andrea came over so because I wanted to cook her a delicious meal (I am awesome, I know). So we had portobello mushroom burgers, chopped asparagus pieces that were sautéed with the mushrooms, and mashed-up yukon gold potatoes. Dinner was followed by MOTHERFUCKING DINOSAUR CUPCAKES. Vegan cupcakes so yummy that even my mom was shocked and heaped on the praise.
It's probably a good thing that I am all out of mushrooms, because looking at this picture makes me want to shove a thousand portobellos in my mouth.
Cupcakes pre-icing! What a delightful shade of green. Dyeing food might be one of my favorite things on earth. These are the golden vanilla cupcakes from Vegan Cupcakes Take Over the World. Although they aren't really golden anymore. These came out so well, really fluffy and moist.
The vegan fluffy buttercream frosting recipe from VCTOtW made a lotttt of frosting. And also contained 3.5 cups of confectioner's sugar. This frosting was AMAZING. Especially after dyed a violet-ish shade. This recipe is total proof that you do not need eggs, milk, or butter to make the best cupcakes on earth.
