Oh and he totally, totally thinks Kasady's a redneck hilly billy. THAT HE CAN SHARE WITH THE WORLD. :P
For empaths, Eddie Brock is usually a flatline of anger, but overall he thinks he's a decent person (all things considering). The symbiote will just feel like an alien unreadable.
Qui-Gon Jinn: Because he's a Jedi Master, he's probably not going to be very easy to read. Usually he'll just give off a general feeling of peace, but if he's unfocused, he might let slip some of the issues he'd normally keep under wraps (ie his attraction/attachment to Obi-Wan Kenobi). But overall he won't be too accessible to mind readers. I don't really want the whole attraction thing to be delved into two deeply/told ICly to Obi-Wan though. For empaths, he is usually a well of calm.
RC 1136 "Darman": Since he's a clone with pretty limited experience with Jedi (and the like), there's basically no mind resistance for him. Schuldig kind of already ran into him. xP The only problem with mind reading him is that if he thinks the telepath is going to use the information from his mind against him, he will immediately start thinking how to kill the telepath in question as a more permanent solution to guard his secrets.
Unless he's led to believe they're a Sith/allied with the Emperor. Then they're cool. :P
The thought most on his mind is how to execute Order 66 and kill all Jedi/Force users. The thing I don't want mind-readers to know is his plans for Earth/Landels (he plans to "persuade" Landels to give him the technology that made it capable to take people from all times/places and bring it back to the Empire). For empaths, Darman is pretty cheerfully collected/quietly confident. He has some doubts, but he's usually pretty single-minded.

Just be prepared for an insanely curious Schuldig to result when he realizes that their minds are illegible to him, since that's not something he's encountered before.
