Both of these are side dishes and extremely simple. One is my own and one is from the new Everyday Food I picked up at the grocery store and made with dinner tonight.
Buttery Broccoli with Parsley
1 1/2 lbs broccoli, trimmed
2 tbsp butter (I used smart start spread)
1/4 cup chopped parsley leaves
1 tsp white wine vinegar
salt and pepper to taste
In a steamer basket over a sauce pan filled with 1 inch of water, bring to a boil and steam broccoli for 6 to 8 minutes. Remove basket, pour out water and return broccoli to pan. Toss with butter, parsley and vinegar until combined. Remove from heat and season with salt and pepper
per serv. 87 cal, 6.1 gr. fat. (3.6 gr sat fat), 3 gr protein, 7.1 gr. carbs, 2.8 grams fiber

Fruit Salad
1/2 cup orange juice
1 tbsp honey
1 tsp cinnamon
1 tsp vanilla
1 apple, chopped
1 banana, chopped
1/2 pint blueberries
1/2 cup grapes, halved
(or any mixture of fruit you wish)
Whisk o.j. cinnamon and vanilla together. Drizzle honey while whisking so no lumps form. Pour over fruit and let set for a few hours or over night.
