Broccoli Cheese Chicken

I'm trying to find my motivation, people, and I believe the children have stolen it! I realize there has been a serious lack of posts here; maybe when school starts, I'll be able to...um...do things again. In the meantime...

Being a big fan of the Crock Pot, as you know, here is what we had for dinner the other night. (You'd think the Crock Pot would be better in the fall/winter, but it's actually nice to not have to turn on the oven while it's so hot outside!)

Broccoli Cheese Chicken

4 boneless, skinless chicken breasts
1 can broccoli cheese soup
1/4 cup milk
2 TBSP. butter, melted
1 box frozen chopped broccoli

Spray crock with non-stick spray. Lay chicken breasts across the bottom of the crock. (An oval-shaped cooker is best for this dish, if you have one.) Season the chicken with salt and pepper to taste.

Combine soup, milk and melted butter in a small bowl. Mix well. Pour over chicken breasts.

Cook on low 4-5 hours, depending on the size of your breasts. (heh)

Put broccoli in the microwave for about 30 seconds, just long enough for you to be able to break it apart. Top chicken with broccoli. Replace lid and cook for an additional 30-60 minutes, until broccoli is cooked thoroughly.

Serve with rice.

* My kids actually ate this without complaint!*
