Chicken Thighs
marinade
1/4 cup lemon juice
1/2 cup balsamic vinegar
2 tablespoons lemon zest (about 2 lemons)
1/2 cup olive oil
emeril's essence (or chili powder, cumin, cayenne, garlic powder, onion powder, oregano, whatever else you have laying around)
3 tablespoons chopped garlic
3 tablespoons thyme (and/or rosemary)
salt & pepper
marinate chicken for 2-4 hours. pat dry, season with salt pepper cayenne on both sides and pan fry (or bake)
