My ex-brother-in-law owns Kuma's. I don't know if he'd make space to teach you the trade, though. I could start that line of questioning, if you like.

The downside of being a chef seems to be the crazy hours and working holidays/weekends.

Yeah, Kuma's might be a little umm.. tight? crazy? I dunno.. Cooking is one of those things that I can't decide if its better to keep it as a dream, or pursue it to fruition. Pay would be much less, work would be much more hectic. Each day would bring something new and different though..

I often wonder what other people do, when face with such issues as boredom in the work place. Am I just less tolerant of it than others? Is it me (as it is my #1 complaint), or have I just had a string of bad luck?

I think the only job I ever really enjoyed was Borders (even as some issues specific to the Michigan Ave store royally pissed me off). Okay - that's not true - I liked working at the Apollo doing stage/costuming stuff, but working evenings/weekends/holidays was too much for me and the prospect of having to go out and land a new job whenever a show ended its run would stress me too much.

Mostly jobs have been a source of income for me to go out and do the things I liked to do when the weekend came. Polo was just plain desperate survival since I stopped having a life when I joined LP.

I don't think its unreasonable to think that it's just the jobs you've been landing.

I have a friend, that I could call that is studying Culinary in Chicago right now. Should have mentioned this more over the weekend, and I could have called him while you were in town. I think you at least know him.
