at the health food store where I worked a few years ago, we made gluten-free ginger cookies with millet flour. cookies are easier to make gluten-free because they don't have to be fluffy or cohesive the way cakes and breads do.

But if you bake cake and bread in a baking tin it will be good. But the dough has to be more soft as with wheat. Otherwise the bread will be to dry.

In Sweden we have a good book for baking no gluten bread and cakes. I hope they have such a kind of book in Italy too.

I don't think there are such books in Italy. I had a hard time even finding wheat free crackers today. But I know I will find it when I go to Germany next month!

my mother makes this amazing peruvian dish called "papa rellena" and she's coming over to make it this weekend. ill post recipe and pictures as to how to do it
