i have an amazing chef for a boyfriend. he makes most of our meals because he's so damn confident and adept in the kitchen. i like to make food, but i'm nowhere nearly as experienced. however, this weekend i made a few things i've been itching to make of late:
first was the mushroom cupcakes i've wanted to make ever since i saw a write-up of this new cupcake book in the sunday paper a few weeks ago.
i had them spaced apart and stuck them in the freezer for a spell before consolidating them on fewer trays. i was afraid the icing would smear everywhere otherwise.
ingredients: lemon cake mix from trader joe's, cream cheese icing with red food dye (the most saturated hue i could achieve was still pink, but i like how they turned out), white chocolate chips and white candy melts.
next: i was very inspired by (read: drooling over) schnuckypuss 's post from the other day. i had to make some herbed goat cheese tarts myself!
alterations i made in the recipe: i used a muffin tin, so these are what i ended up calling tartlets. i added some cubed goat cheese feta on top of each tartlet. herbs all came from the garden: thyme, parsley, oregano, and just a bit of rosemary.
the rest of the weekend was grand. dan bought a used canoe, and we went out on suzy on monday. friends were visiting. i got alot of knitting done on the front of the dress i'm making for a friend's daughter. but eeeeep, i;m flying to houston on thursday, which is creeping right up. i'm exhausted and i have yet to pack. time for bed, though. i was a zombie today after the long weekend.
