Richard K. Morgan, author of the unbelievably excellent sci-fi noir "Altered Carbon" series-- which I emphatically recommend-- recently turned his barrels toward fantasy. His basic premise was something along the lines of:
"Just how unpleasant would it really be to live in a fantasy world that actually had to follow its own rules of reality?"
The results are apparently fantastic. I can't stand fantasy-- for reasons a bit similar to your own-- but that I'm probably going to have to read.
I believe the title is, "The Steel Remains".
Anyway, Morgan is excellent. Compelling characters and great dialogue.
Good to know I wont have to wait or worry about him dying before he finishes it. :-)
I've found it difficult to put it down. I'm forcing myself to get all of my projects done this morning before picking it up. It's been quite a while since I've found a book that engrossing. Even longer since I've found it in an author I didn't already know.
