I'm looking for a desktop Apple Mac. Preferably something that can run OSX 10.5.x. Free or very cheap is ideal. Or maybe a barter...

Today I finally have time to sit down and think on what I’ve done in the past year.

I started as a student at Western Culinary Institute on April 7, 2008.

On March 27, at 9:30pm, 2009, I walked out of Western Culinary Institute as a Chef.

These two very simple dates can’t even begin to encompass what I’ve gone through and learned in the time between. I’ve struggled, I’ve suffered, I’ve learned, I’ve changed from an amateur wannabe chef to a well-trained knowledgeable Chef. Oh yes, there is still a lot for me to learn in the years to come, but I am now very comfortable with the entire concept of being a Chef, very comfortable with my skills.

My original plans for externship at Playboy Mansion was derailed because of my background check (No driver’s license when I was 17, riding a motorcycle, which is a lame excuse for not accepting me) but I’ve secured another externship at Rover’s in Seattle. I start there May 11.

Around Oct 25 (or 29) I’ll be attending my graduation ceremony at WCI. It’s just a mere formality, to receive my degree, for all intents and purposes, I am a Chef now.

There was some people who thought I was crazy for doing this. Some thought I couldn’t do it. Some were very supportive. There was some times where I thought I couldn’t do it. But I preserved and continued.

I finished my year with 4.0 GPA and near-perfect attendance record. (Missed 3 days: 2 times the teacher sent me home because I looked too sick, 1 because I threw my back out). That is a huge accomplishment by itself. For those who know me, I’ve never gotten grades that high, or had the attendance… :)

Going to WCI was the best decision I’ve ever made in my life.
