I am un-American ... because I refuse to ever cook with bacon again. I was craving potato soup and found
this recipe" and decided to try it. While it's full of not-good-for-you stuff, like bacon, I was massively craving it and decided to try it out.
Now I haven't cooked real bacon is a loooooong time, like I haven't cooked it since I used to make breakfast every Sunday morning with my Dad as a kid. And even then when we found out that both my Dad and I had high cholestrol, we switched over to turkey bacon (of which I was only ever allowed to have 2 slices of). So when I opened up my package of bacon and threw the first 5 slices in the pan, I was not expecting the amount of fat that oozed out into the pan. The recipe called for reserving 1/4 cup of the fat for the soup, so I stupidly assumed that I'd maybe get about 1/2 cup of fat when I was finished. ((Before ppl say that should have been a red flag, you're talking to someone who loves to cook desserts. Did you know the best frostings are literally just butter and sugar? Tons of it just mixed together. So 1/4 cup of bacon fat for a soup that would heartily serve 8 ppl is a toss in the bucket to me.))
Then I started cooking ... and before the 5 slices in the pan was done, I already had my 1/4 cup of fat PLUS a little extra. By the time I had finished my entire lb of bacon slices, I have well over 1 1/2 cups of fat.
I may have thrown up a little in the back of my throat when I stared at the fat just sitting in the measuring cup.
So turkey bacon it is next time!
edit: If anyone was wondering - the soup came out ok. Unfortunately the best potato soup I had was in New Paltz and this doesn't compare to what I had there. I'm thinking of tweeking the hell outta this recipe tho to make it a bit healthier. When I made this past batch, I used sodium free chicken stock, which also might be why it doesn't taste of awesome-ness. I'm thinking that adding more veggies to it might help it actually ... and not using bacon fat.
