Recipe post - a substitute for chips

Just thought I'd share a good recipe with you, as I enjoyed it this evening:


* Preheat oven to Gas Mark 7 (200°C)
* Cut slices of butternut squash just under a centimetre wide
* Peel them, remove any seeds, and cut into wedges
* In a bowl, coat them in a little oil (the low calorie spray oil is ideal for this), and season with salt, pepper and paprika (smoked paprika if you can get it - it adds just that bit extra), mixing well to ensure an even coating
* Put the wedges onto a baking tray/tin and bake for 20-30 minutes, until soft and browned

They do make a good substitute for chips if you're not a potato fan :-)
