aome a few weeks ago now that I was intending to post a rather delicious soup receipe given to me by a friend. So, rather belatedly, here it is:
Ingredients:
750g Butternut squash, peeled and cubed (converts to 1lb, 10oz)
2 cloves of garlic, chopped or crushed
1 onion, chopped
1" cube of ginger, peeled and grated (though I just chopped as finely as I could)
1½ pints very weak stock (As it's only meant to be very weak, I think you can get away with water and adding a little more onion and perhaps some chopped up celery to the recipe at stage 1 for flavour)
A little oil for frying
Salt/Pepper to taste
* Fry the onion and garlic in the bottom of a large thick-bottomed saucepan for a few minutes
* Add the squash and the ginger and stir/fry for a further 8 minutes
* Add the stock, bring to the boil
* Cover and allow to simmer for 20 minutes
* Blend and add seasoning to taste
The ginger really makes this very, very tasty. (
