You wouldn't know it from my cheese posts, but my employer has an entire case full of deli cheeses. We sell an awful lot of them, which means I'm fully checked out on the big industrial
deli slicers. The slicers are pretty cool in that new ones cost upwards of $20,000 (or so I'm told). It's ok though, if taken care of they last literally forever. One of my coworkers once worked at a deli that had a sixty year old slicer that was basically identical to the one at our stand.
Anyway, I don't usually write about the deli cheeses I've sold or eaten because they're pretty much the same everywhere. Sure, you can get a higher end product like
Boar's Head, but at the end of the day your standard issue provolones, swisses, american and munster cheeses are largely the same everywhere.
However, my cheese employer recently got a new deli cheese that is totally awesome and unlike most any other deli cheese I've had before so it's going on the list.

Three Pepper Colby Jack starts with your basic
Colby Jack. Then it adds jalapeno peppers, chipotle peppers and habanero peppers. The results is a deli cheese with a massive kick. It starts hot, stays hot and has a hot finish. For someone like me who enjoys spicy food, it's very 'tasty hot' without crossing over to 'too hot,' but if your palate can't handle the heat, you may want to avoid this. It's great for spicing up a sandwich, and I suspect it would be good on chili, nachos or anywhere else that might normally have both peppers and cheese.
Speaking of the cheese shop, I'll be there Saturday, November 12 and Wednesday, November 23rd. I'll be there from 9 to 4 both days. Please note that November 23rd is the day before Thanksgiving, which is traditionally one of three busiest days at the West Side Market. So if you're thinking of swinging by just to say hi, that's probably a bad day to do it. The 12th shouldn't be nearly as crazy.
